We look for typical Italian wines with clarity and freshness, usually made from indigenous Italian grape varieties using clean, transparent winemaking techniques and no obvious use of oak.

.75 oz lime
.25 oz gum syrup

Shake in tin with ice, double strain, coupe

1.5 oz Liquori dell’Etna Fico D’India
.5 oz Alpe Genepy
.75 oz lemon
1.5 oz Prosecco (preferably Sorelle Bronca)
Shake Fico d’India, Genepy and lemon with ice, double strain into coupe, top with prosecco, garnish with lemon twist

2 oz Liquori dell’Etna Pera
1 oz Bordiga Bianco Vermouth
.75 oz lemon
Egg white
Soda water
Dry shake egg white, add rest of ingredients and ice to tin and hard shake, double strain into a fizz glass, top with soda water, ghost lemon twist
Peruvian Mulberry Cha Cha
1 oz Pisco
1 oz Liquori dell’Etna Gelso Nero
1 oz Bordiga Extra Dry Vermouth
2 dashes orange bitters
Stir over ice, serve with big rock and orange twist

1 oz Liquori dell’Etna Arancia
1 oz orgeat
3 oz Prosecco (preferably Sorelle Bronca)
Build in glass. Serve on a big cube with an orange slice.

1 oz Liquore delle Sirene Americano Bianco
1 oz Liquori dell’Etna Fico D’India
.75 oz lemon
Shake over ice, double strain into coupe, garnish with lemon twist
Orchard Spritz
1.5 oz Liquori dell’Etna Pera
.25 oz Il Gusto di Amalfi Finocchietto
.25 oz lemon
1 oz soda water
4 oz Prosecco (preferably Sorelle Bronca)
Shake Pera, Finochietto and lemon over ice. Strain into collins or wine glass. Top with ice, soda, prosecco and garnish with lemon twist.

1.5 oz Japanese Whisky
1 oz Liquori dell’Etna Arancia
3 oz soda water
Build in glass, top with ice, garnish with lemon twist
Sunset Shakedown
1.5 oz Blanco Tequila
1 oz Liquori dell”Etna Fico D’India
.5 oz Bordiga Aperitivo
Stir over ice, serve in Nick & Nora with grapefruit twist

Buildi in glass, garnish with sage leaf
