An Exciting New Vermentino From Sardegna's Chessa

Introducing the newest release from Sardinian winemaker Chessa! C’era Una Volta means ‘once upon a time,’ and for Chessa winemaker and owner Giovanna Chessa, it’s a reference to how Vermentino was made by her forefathers when the whole berries were crushed and the skins were spontaneously fermented with the juice.
Giovanna has chosen to use both tonneaux (500L wooden barrels) and stainless steel as fermentation vessels and completes the aging in stainless steel. She also picks the grape for this special cuvée later than her classic bottling, Vermentino ‘Mattariga’, giving the resulting wine an exceptionally high density of fruit and intensity.
Rich, unctuous, and honeyed, yet entirely dry, packed with flavors of lemon oil and mediterranean herbs. A food pairing wine through! Enjoy with the classic Sardinian pasta with bottarga, squid ink seafood pasta dish, or enjoy after dinner with a range of hard cheeses (think Pecorino) and honey.
